Bianco della Cervara - Typical Geographic Indication “Dell’Umbria “
Bianco della Cervara stands out among the white wines of Todini production. It is obtained from the indigenous grape Grechetto di Todi, an ancient vine cultivated for first time in Magna Greece then by the Etruscans who brought it to Central Italy. The vineyard is situated in the best part of the Colli Martani wine producing area near Todi. This wine has a slightly dark straw colour and a delicate bouquet with notes of apple. Obtained from a careful selection of grapes, Bianco della Cervara is a full and smooth wine, with a distinct and rather fresh bouquet. It should be served with hors d’oeuvres, salted fish, shellfish and pasta dishes.
VARIETY OF GRAPE: Grechetto
VINEYARD: The vineyards are property of the Agricola Todini S.r.l. situated in the best production zones of the Colli Martani - Todi. Planting distance: traditional (3.00 x 1.50) - new plants (2.80 x 0.80). Training System: fan training, cordon trained and spur pruned. Average age of the vines: 20/25 years - 3 years for new vines.
LAND: A vast area of hilly territory. Type: clayey, sedimentary. Altitude: 300metres above sea level.
HARVEST TIME: From 10th September until 25th September.
YIELD:
Grapes: 90q.li/Hectare
Wine: 65hl. /Hectare
WINEMAKING: Pressing: soft pressing of whole grapes using pneumatic presses. Immediate separation from the skins.
Decanting: settling and removal of the must from the lees at low temperatures, for the cleaning of the must.
Alcoholic fermentation: at controlled temperature (max 18°C.) for an average of 15 days in stainless steel. Use of selected varietal and fragrant yeasts.
Blend: of 10/15% of the same type of product from cold maceration and 5% of the product obtained from carbonic maceration.
BOTTLING: to start from the month of March after the harvest.
MATURING: at least 60 days in the bottle.
AVERAGE YEARLY PRODUCTION: 25 thousand bottles.
ORGANOLEPTIC CHARACTERISTICS: Colour: slightly strong pale yellow. Fragrance: complex but sharp, evident freshness. In all, a well structured wine.
