Cinta Senese Salami
From the breeding of Cinta Senese in the semi wild state of the Farm Tore Olivola, of Doglio, an out of the way place, between green hills next to the town Todi , in Umbria, we produce our salami.
A property of almost 20 hectares, (49420 acres) these animals graze on a high quality diet (OGM free, BIO) and all that the natural reserve and its woods can offer (acorns, hazel-nuts etc).
After the butchering some of the fresh cuts are sent to our shop in Viareggio, some other cuts are salted in Umbria by skilled craftsmen, and after seasoned, they’ll produce wonderful salami, lard and hams
